Quick Pickled Onions

This is just a quick post to show how to quickly pickle red onions (or maybe anything else for that matter!  I haven't tried yet, but you better believe I will).  I made these on Easter to use in a deviled egg recipe (will post soon) and loved them so much that I threw them on the salad, too.  I'm not big into raw onions because they can have such a harsh flavor, but pickled is just delicious.  The recipe says to boil the water/vinegar mix and then add the onions, but I boiled them right in the mix to make them softer.  If you prefer a crunchier pickled onion then wait to add it in.  I can't wait to also put them on veggie burgers and hot dogs.  If you have any ideas for what to put pickled onions on, they would be much appreciated!

Quick Pickled Onions

1 large red onion, diced 1 cup water 1 cup vinegar (I've used cider once and half red wine/half white once - both worked well) 1/4 cup sugar

Combine the water, vinegar, and sugar.  Mix to combine.  Add in the onion and microwave on high for about 5 minutes (until the water boils).  Let stand for about 15 minutes before serving.  Store leftovers in an airtight container in the fridge.
