Homemade Pizza Pockets

Pizza is such a staple.  Kids love it.  Adults love it.  And if you're lucky, your kids will like the same toppings as you.  My daughter is wild and independent in every area of her life, but when it comes to pizza she's just like her mommy.  Black olives or bust!  Her general method of pizza eating is to pick all of the olives off and eat them, then shove the slice in her face cheese first.  And by cheese first, I mean the flat side of the pizza, not the corner.  It's quite a scene, and you best have some Wet Ones around afterward.

The best part about these little pizza pockets: wonton wrappers.  They make it so easy!  No dough required.  The end result is more like a thin and crispy pizza than a deep dish.  And that's not a complaint!  It really lets the filling shine.  Of course, add or delete whatever "toppings" you like to make it your own little pocket of heaven.

Homemade Pizza Pockets

1 Tbsp olive oil 1/2 cup diced onion 1/2 cup diced bell pepper 1 large or 2 small cloves garlic, minced 2 cups marinara sauce 1/2 cup black olives 1 cup shredded mozzarella cheese 1/2 cup shredded (or diced) provolone cheese

Preheat the oven to 375 degrees. Spray two baking sheets with non-stick cooking spray.

Heat the olive oil in a small skillet over medium heat. Add the onion and green pepper and cook for 3-5 minutes.  Then add in the garlic and cook for another 3-5 minutes.

In a medium bowl, combine the marinara sauce and shredded cheese. Stir in the onion mixture and the olives.

Dip your finger in water and use it to wet the outside of the wrappers.  Add a spoonful of the mixture to the center of each wrapper, one at a time.  Fold the wrapper over and seal the edges.  It is easier for me to do this while holding the wonton wrapper, but some people find it easier to do while they are laying on the baking sheet.  Repeat with remaining wrappers. Spray the tops with non-stick cooking spray.  Bake for 12-15 minutes or until lightly golden. Serve hot.
