Margarita Popsicles

These popsicles are all about celebrating!  For one thing, I finished my summer Finance class.  Hopefully, by this time next year I'll be a graduate and I'll be free to enjoy as many tequila-filled popsicles as I want.  Also, I found this recipe in my drafts, so it wasn't lost to my dead computer.  Woohoo!   Third, my college friend, Larissa, got married recently and is now relaxing on a beach in Australia/Fiji (I'm ridiculouslyonly a little jealous).  That girl loves tequila and margaritas.  Oooh our college days were filled with far too much of both.  She would love this popsicle.

And because I have no way of putting new pictures onto a non-existent computer, now seems like the perfect time to share an old picture of the little one.  My how she's grown!

Margarita Popsicles

3/4 cup sugar 3/4 cup fresh lime juice 1/2 cup water 2 tablespoons fresh lemon juice 2 tablespoons fresh orange juice 2 tablespoons tequila 2 tablespoons orange liqueur (or extra orange juice) 1/4 lime wedge Kosher salt, for garnish Popsicle molds, or Dixie cups with popsicle sticks!

Combine sugar, lime juice, water, lemon juice and orange juice in a small saucepan over medium heat. Cook, stirring, until sugar dissolves. Remove from heat and allow to cool. Once cool transfer to a blender with tequila, orange liqueur, and lime wedge and process until smooth. Pour into popsicle molds. Freeze until hard, preferably overnight. Remove from freezer and run the mold under warm water to loosen popsicle. Garnish with kosher salt and serve.
