Cucumber Hummus Cups

This is one of those "recipes" that makes my dad call me and say, "You call that a recipe?  You're just putting stuff together!"  So this, my friends, is an assembly.  Which is just perfect because who wants to sit in a kitchen all summer anyway?  You can throw this snack together in 5 minutes and enjoy it out on a picnic blanket while your kids brush up on their volleyball skills (hey, it's never too early to start!).

Cucumber Hummus Cups Printer-friendly version

1 large English cucumber 8 ounces hummus (just make a batch and eat the leftovers another time) shredded carrots for garnish

Slice the cucumber into 1 inch thick pieces.  Scoop out the middle to make a little cup.  Fill it with hummus.  Top with shredded carrots.  Enjoy! 

Source: I'm pretty sure I saw it on a TV cooking show, but I can't remember which one because it isn't like I had to write the recipe/assembly down.  You can find a variety of variations by doing a Google search.
