Cranberry Apple Crescent Rolls

Well, my plan from earlier this week to post healthy recipes is already taking a hiatus.  But you can only eat so much oatmeal and whole wheat toast, amIright?  Sometimes you just need a pastry.  And, hey, we rounded out the day with veggie chili that was chock full of fiber and protein and vitamins (just let me feel good about myself for a minute.  thanks.).

I made these rolls with I Can't Believe It's Not Butter® Deliciously Simple and it worked out great.  When I found it in the store, I obviously flipped the package over to see what was so "simple."  It's actually made out of ingredients that I can understand (oil! yogurt! salt!), but thankfully, it is also still really creamy and has no cholesterol or trans fats.  We've been eating it on toast and cooking with it... no complaints!  We all love it.  Definitely give it a try.

Jake said that these rolls tasted like a pastry that you would get from a real bakery, which is funny considering it is made with canned crescents.  But I was really impressed with them, too (if I do say so myself - ha!).  So, maybe we've found the perfect recipe: semi-homemade but with a fresh bakery taste!

Cranberry Apple Crescent Rolls

1 can crescent rolls 1/4 cup I Can't Believe It's Not Butter® Deliciously Simple 1 Tbsp brown sugar 1/4 tsp cinnamon 1/4 tsp nutmeg a dash of salt 1/2 cup diced apples 1/4 cup dried cranberries 1 Tbsp milk 1/2 cup powdered sugar 1/4 cup sliced almonds

Preheat the oven to 375º.

Separate the crescent rolls into eight equal triangles on a parchment-lined baking sheet.  In a bowl, mix the Deliciously Simple, brown sugar, cinnamon, nutmeg, and salt.  Then fold in the apple and cranberries.

Spread the mixture evenly on the crescent triangles and roll them tightly.  Leave at least two inches between each roll and bake until they are golden and puffy, about 11-13 minutes.

While the rolls are baking, mix the milk and powdered sugar until they form a glaze.  Lightly toast the almonds in a frying pan over medium heat (just until fragrant, you don't want to burn them!).

Remove the rolls from the oven and let them cool for about 5 minutes.  Drizzle the glaze over the top and immediately sprinkle with almonds.
