Classic Foolproof Popovers + Popover Pan Giveaway!
About 15 years ago (was it really 15 years ago), I was on one of the annual trips in which I would go down to Florida to spend a week with Nonnie and Grandpa. It was a fun getaway for me, and it got me out of my parents' hair. Win-win! While on this one visit, they took me to a British pub that seemed really out of place in the middle of a strip mall, but once you walked through the front door it was dark with lots of wood just as you would expect. I'm not really sure what I ordered for my meal (probably some cliché bangers and mash), but what I DO remember is the popovers that they served before the meal. I loved them! I love all carbs, so this isn't surprising, but they were light, yet eggy, and they made me feel like I was so international-chic.
And, of course, now is the perfect time to make popovers with a new royal baby on the way! What a perfect excuse to speak with a British accent and serve high tea.
Now I'm in the mood for scones. And clotted cream. Help.

Classic Foolproof Popovers
3 tablespoons melted butter, divided 2 eggs 1 cup warm milk 1 cup all-purpose flour 1 teaspoon kosher salt
Preheat the oven to 400 degrees.
Coat 6 popover cups (or 8 muffin cups) with 1 tablespoon of the melted butter and put the tin in the oven on a slightly below middle rack for 5 minutes. Meanwhile, mix the eggs in a stand mixer or blender until light yellow. Add the warmed milk and blend. Add the flour, salt and remaining melted butter, and mix until smooth. Pour the batter into the warmed muffin tin and return to the oven to bake until golden, about 40 minutes (35 minutes if using a muffin tin). Remove from the oven and serve warm.
