I could hear the grumblings from miles away.  How could a highly respectable blog like life + kitchen let a no-good daughter of a sailor put a guest blog up without testing the recipe?  So, I tested it last night.  It was purely for research and to calm the masses.  It had nothing to do with the fact that I had to keep a drool rag in hand every time I looked at the pictures.  I promise.  And the results are in: the enchiladas are flippin' amazing!  I normally don't even like chicken all that much but I loved these.  You must try them right now.  Get off the computer and get to the kitchen!
